Ingredients
- 375 ml (1 ½ cups) honey
- 4 sprigs thyme, leaves removed
- 2 garlic cloves, minced
- 500 g (17 oz) skinless fish fillet, cut into 3x3 cubes
- Salt and pepper to taste
Preparation
- In a bowl, mix honey, thyme, garlic, salt and pepper. Check seasoning.
- Coat the salmon cubes with the prepared mixture.
- Place the salmon cubes on the grill in a smoker (cupboard, indirect-cooking BBQ or small domestic smoker) and leave to smoke for 15 minutes over low heat. The salmon should remain pink throughout.
- Once out of the smoker, place the salmon pieces in the remaining lacquer and marinate for 1 hour.
