Hot smoked salmon bonbon

Ingredients

  • 375 ml (1 ½ cups) honey
  • 4 sprigs thyme, leaves removed
  • 2 garlic cloves, minced
  • 500 g (17 oz) skinless fish fillet, cut into 3x3 cubes
  • Salt and pepper to taste

Preparation

  1. In a bowl, mix honey, thyme, garlic, salt and pepper. Check seasoning.
  2. Coat the salmon cubes with the prepared mixture.
  3. Place the salmon cubes on the grill in a smoker (cupboard, indirect-cooking BBQ or small domestic smoker) and leave to smoke for 15 minutes over low heat. The salmon should remain pink throughout.
  4. Once out of the smoker, place the salmon pieces in the remaining lacquer and marinate for 1 hour.
