Fish candy

FISH CANDIES

Portions : 4 - Preparation : 15 minutes - Cooking : 5 minutes

Ingredients

  • 250 g (9 oz) fresh cod (or salmon, sea bass, other), cubed 1p x 1p
  • 5 ml (1 tsp.) mild smoked paprika
  • 1 lemon, zest
  • salt and freshly ground pepper to taste

Breadcrumbs

  • 250 ml (1 cup) flour
  • 60 ml (4 tbsp.) milk
  • 2 eggs
  • Panko breadcrumbs, as needed
  • Canola oil for frying

Sauce

  • 250 ml (1 cup) plain yogurt
  • 30 ml (2 tbsp.) capers, chopped
  • 15 ml (1 tbsp.) mustard

Preparation

  1. Preheat fryer oil to 190°C (375°F).
  2. Sprinkle fish cubes with salt, pepper, sweet paprika and lemon zest.
  3. Take 3 bowls, one with flour, another with milk and eggs, beaten with a fork, and the third with breadcrumbs.
  4. Roll the fish cubes in the flour, then pass them through the beaten egg and milk, and finally through the breadcrumbs.
  5. In the oil of the deep fryer, fry the cubes for 2-3 minutes or until golden-brown. Remove to paper towels.
  6. In a bowl, mix yogurt, capers and mustard.
  7. Serve the fish candies with the sauce.
