FISH CANDIES
Portions : 4 - Preparation : 15 minutes - Cooking : 5 minutes
Ingredients
- 250 g (9 oz) fresh cod (or salmon, sea bass, other), cubed 1p x 1p
- 5 ml (1 tsp.) mild smoked paprika
- 1 lemon, zest
- salt and freshly ground pepper to taste
Breadcrumbs
- 250 ml (1 cup) flour
- 60 ml (4 tbsp.) milk
- 2 eggs
- Panko breadcrumbs, as needed
- Canola oil for frying
Sauce
- 250 ml (1 cup) plain yogurt
- 30 ml (2 tbsp.) capers, chopped
- 15 ml (1 tbsp.) mustard
Preparation
- Preheat fryer oil to 190°C (375°F).
- Sprinkle fish cubes with salt, pepper, sweet paprika and lemon zest.
- Take 3 bowls, one with flour, another with milk and eggs, beaten with a fork, and the third with breadcrumbs.
- Roll the fish cubes in the flour, then pass them through the beaten egg and milk, and finally through the breadcrumbs.
- In the oil of the deep fryer, fry the cubes for 2-3 minutes or until golden-brown. Remove to paper towels.
- In a bowl, mix yogurt, capers and mustard.
- Serve the fish candies with the sauce.
