Mouthful of avocado mousse and Mexican-style grilled shrimp

BITE-SIZE AVOCADO MOUSSE AND GRILLED SHRIMP À LA MEXICAINE

Ingredients

  • 30 ml (2 tablespoons) Mycryo cocoa butter
  • 2.5 ml (1/2 tsp.) Mexican chili powder
  • 2.5 ml (1/2 tsp.) onion powder
  • 2.5 ml (1/2 tsp.) garlic powder
  • 2.5 ml (1/2 tsp.) sugar
  • salt and pepper to taste
  • 16 raw shrimp 31/40
  • 125 ml (1/2 cup) avocado mousse
  • ¼ bunch cilantro, leaves removed, chopped
  • 16 homemade blinis

Preparation

  1. Mix cocoa butter and all seasonings in a bowl.
  2. Coat the shrimp with the mixture.
  3. In a hot, fat-free, ridged frying pan, grill the shrimps for 2 minutes on each side.
  4. Season with salt and pepper.

Assembly

Place a small amount of avocado mousse on each blini, followed by a grilled shrimp. Add a little chopped coriander and enjoy.
