BITE-SIZE AVOCADO MOUSSE AND GRILLED SHRIMP À LA MEXICAINE

Ingredients
- 30 ml (2 tablespoons) Mycryo cocoa butter
- 2.5 ml (1/2 tsp.) Mexican chili powder
- 2.5 ml (1/2 tsp.) onion powder
- 2.5 ml (1/2 tsp.) garlic powder
- 2.5 ml (1/2 tsp.) sugar
- salt and pepper to taste
- 16 raw shrimp 31/40
- 125 ml (1/2 cup) avocado mousse
- ¼ bunch cilantro, leaves removed, chopped
- 16 homemade blinis
Preparation
- Mix cocoa butter and all seasonings in a bowl.
- Coat the shrimp with the mixture.
- In a hot, fat-free, ridged frying pan, grill the shrimps for 2 minutes on each side.
- Season with salt and pepper.
Assembly
Place a small amount of avocado mousse on each blini, followed by a grilled shrimp. Add a little chopped coriander and enjoy.
