Ingredients
- 1 puff pastry, homemade or store-bought
- 125 ml (1/2 cup) bacon, cooked and chopped
- 250 ml (1 cup) mozzarella, grated
- 3 eggs
- 125 ml (1/2 cup) 35% cream
- ¼ bunch chives, snipped
- ¼ bunch chopped parsley
- salt and freshly ground pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- On a work surface, roll out the puff pastry.
- Sprinkle the bacon, grated cheese and pepper over the entire surface.
- Roll the dough into a roll and refrigerate for 30 minutes.
- Meanwhile, whisk eggs, cream, chives, parsley, salt and pepper in a bowl.
- Using a knife, slice the roll into rounds about ½ inch thick.
- In each bottom of a mini cupcake tin, crush a slice of dough.
- Divide the prepared mixture between the molds.
- Place the molds on a baking sheet and bake for 30 minutes.
