Bacon puff pastries

Bouchées feuilletées au bacon

Ingredients

  • 1 puff pastry, homemade or store-bought
  • 125 ml (1/2 cup) bacon, cooked and chopped
  • 250 ml (1 cup) mozzarella, grated
  • 3 eggs
  • 125 ml (1/2 cup) 35% cream
  • ¼ bunch chives, snipped
  • ¼ bunch chopped parsley
  • salt and freshly ground pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. On a work surface, roll out the puff pastry.
  3. Sprinkle the bacon, grated cheese and pepper over the entire surface.
  4. Roll the dough into a roll and refrigerate for 30 minutes.
  5. Meanwhile, whisk eggs, cream, chives, parsley, salt and pepper in a bowl.
  6. Using a knife, slice the roll into rounds about ½ inch thick.
  7. In each bottom of a mini cupcake tin, crush a slice of dough.
  8. Divide the prepared mixture between the molds.
  9. Place the molds on a baking sheet and bake for 30 minutes.
