Ingredients
- 1 onion, finely chopped
- 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 125 ml (½ cup) port wine
- 250 ml (1 cup) frozen berries
- 2 garlic cloves, minced
- 60 ml (4 tbsp.) maple syrup
- 24 to 36 bread croutons
- 16 slices smoked ham, very fine
- Salt and pepper to taste
Preparation
- In a hot skillet, sauté the onion in the fat of your choice for 2 minutes.
- Add port, berries, garlic and maple syrup and simmer over low heat for 10 minutes. Check seasoning. Leave to cool.
- On each crouton, place the ham and a touch of berry compote.
