SHRIMP SKEWERS IN SWEET AND SOUR SAUCE
Portions : 4 - Preparation : 10 minutes - Cooking time : between 8 and 10 minutes
Ingredients
- 16 peeled shrimp 31/40
- 16 slices mild or hot sausage
- 1 jar VH sweet and sour sauce
- 16 cherry tomatoes
- 1 onion, cut into 4, then separated layer by layer
- 125 ml (1/2 cup) coconut milk
- 16 pineapple cubes
- 45 ml (3 tbsp.) basil leaves, chopped
- 4 portions cooked white rice
- 4 skewer picks
- salt and pepper to taste
Preparation
- Preheat barbecue to maximum.
- On each skewer, alternate shrimp, sausage rings, tomatoes and onion pieces.
- Then brush each skewer with VH Sweet & Sour sauce.
- Place the skewers on the barbecue grill and cook for 3 to 4 minutes on each side, until nicely grilled.
- Meanwhile, combine the remaining VH sauce, coconut milk and pineapple in a saucepan and bring to a simmer.
- Add the basil.
- Place the rice on each plate, followed by the skewers and the creamy sauce.
