Prawn skewers in sweet and sour sauce

SHRIMP SKEWERS IN SWEET AND SOUR SAUCE

Portions : 4 - Preparation : 10 minutes - Cooking time : between 8 and 10 minutes

Ingredients

  • 16 peeled shrimp 31/40
  • 16 slices mild or hot sausage
  • 1 jar VH sweet and sour sauce
  • 16 cherry tomatoes
  • 1 onion, cut into 4, then separated layer by layer
  • 125 ml (1/2 cup) coconut milk
  • 16 pineapple cubes
  • 45 ml (3 tbsp.) basil leaves, chopped
  • 4 portions cooked white rice
  • 4 skewer picks
  • salt and pepper to taste

Preparation

  1. Preheat barbecue to maximum.
  2. On each skewer, alternate shrimp, sausage rings, tomatoes and onion pieces.
  3. Then brush each skewer with VH Sweet & Sour sauce.
  4. Place the skewers on the barbecue grill and cook for 3 to 4 minutes on each side, until nicely grilled.
  5. Meanwhile, combine the remaining VH sauce, coconut milk and pineapple in a saucepan and bring to a simmer.
  6. Add the basil.
  7. Place the rice on each plate, followed by the skewers and the creamy sauce.
