Ingredients
- 125 ml (½ cup) sweet and sour sauce
- 60 ml (4 tablespoons) soy sauce
- 1 clove garlic, minced
- 15 ml (1 tbsp.) ginger, grated
- 4 limes, juice removed
- 2 Québec pork tenderloins, in 1” medallions
- 12 red bell pepper cubes
- 60 ml (4 tbsp.) coriander leaves, chopped
- 60 ml (4 tbsp.) peanuts, crushed
- 4 portions cooked rice
Preparation
- Preheat barbecue to maximum.
- In a bowl, combine sweet and sour sauce, soy sauce, garlic, ginger and lime juice.
- Add pork medallions and coat with sauce.
- Assemble skewers, alternating medallions and red bell pepper cubes.
- Place brochettes on barbecue grill and cook for 4 minutes on each side.
- Serve brochettes with white rice sprinkled with coriander and peanuts.
