Thai-style pork skewers

Ingredients

  • 125 ml (½ cup) sweet and sour sauce
  • 60 ml (4 tablespoons) soy sauce
  • 1 clove garlic, minced
  • 15 ml (1 tbsp.) ginger, grated
  • 4 limes, juice removed
  • 2 Québec pork tenderloins, in 1” medallions
  • 12 red bell pepper cubes
  • 60 ml (4 tbsp.) coriander leaves, chopped
  • 60 ml (4 tbsp.) peanuts, crushed
  • 4 portions cooked rice

Preparation

  1. Preheat barbecue to maximum.
  2. In a bowl, combine sweet and sour sauce, soy sauce, garlic, ginger and lime juice.
  3. Add pork medallions and coat with sauce.
  4. Assemble skewers, alternating medallions and red bell pepper cubes.
  5. Place brochettes on barbecue grill and cook for 4 minutes on each side.
  6. Serve brochettes with white rice sprinkled with coriander and peanuts.
