White chocolate chip and coconut brownies

Ingredients

  • 3 eggs
  • 125 ml (1/2 cup) brown sugar
  • 170 ml (2/3 cup) unsalted butter, melted
  • 250 ml (1 cup) Cacao Barry dark chocolate pistoles, melted
  • 80 ml (1/3 cup) cornstarch
  • 1 pinch salt
  • 60 ml (4 tablespoons) shredded coconut
  • 125 ml (1/2 cup) Cacao Barry white chocolate pistoles, crushed

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. Beat the eggs in a bowl with a whisk, then add the sugar and whisk for at least 2 minutes.
  3. Add the butter and dark chocolate.
  4. Add the cornflour and pinch of salt and mix until smooth.
  5. Add the coconut and white chocolate and mix.
  6. Pour the mixture into a mould lined with butter and flour and bake for 20 minutes.
  7. Leave to cool and unmould.
