Ingredients
- 180 ml (3/4 cup or 12 tbsp) fresh goat cheese
- 90 ml (6 tbsp) chives, finely chopped
- 1 clove garlic, minced
- 30 ml (2 tbsp.) white balsamic vinegar
- 90 ml (6 tbsp) olive oil
- 15 ml (1 tbsp.) herbes de Provence blend
- 1 lemon, juice
- 1 zucchini, cut into strips
- 1 red bell pepper, cut into 4
- 1 carrot, in strips
- 1 onion, thickly sliced
- 4 burger buns
- 250 ml (1 cup) arugula salad
- Salt and pepper to taste
Preparation
- Preheat barbecue to200°C (400°F).
- In a bowl, combine goat cheese, chives, garlic, white balsamic vinegar, salt and pepper. Check seasoning. Set aside.
- In a bowl, combine olive oil, herbes de Provence, lemon juice, salt and pepper.
- Add zucchini, bell bell pepper, carrot and onion and toss to coat.
- Place the vegetables on the grill and grill for 2 to 3 minutes on each side. Remove and set aside.
- For each burger bun, spread the prepared goat cheese mixture, arugula and grilled vegetables.
