Grilled vegetable burger with fresh goat cheese

Ingredients

  • 180 ml (3/4 cup or 12 tbsp) fresh goat cheese
  • 90 ml (6 tbsp) chives, finely chopped
  • 1 clove garlic, minced
  • 30 ml (2 tbsp.) white balsamic vinegar
  • 90 ml (6 tbsp) olive oil
  • 15 ml (1 tbsp.) herbes de Provence blend
  • 1 lemon, juice
  • 1 zucchini, cut into strips
  • 1 red bell pepper, cut into 4
  • 1 carrot, in strips
  • 1 onion, thickly sliced
  • 4 burger buns
  • 250 ml (1 cup) arugula salad
  • Salt and pepper to taste

Preparation

  • Preheat barbecue to200°C (400°F).
  • In a bowl, combine goat cheese, chives, garlic, white balsamic vinegar, salt and pepper. Check seasoning. Set aside.
  • In a bowl, combine olive oil, herbes de Provence, lemon juice, salt and pepper.
  • Add zucchini, bell bell pepper, carrot and onion and toss to coat.
  • Place the vegetables on the grill and grill for 2 to 3 minutes on each side. Remove and set aside.
  • For each burger bun, spread the prepared goat cheese mixture, arugula and grilled vegetables.
