Ingredients
- 250 ml (1 cup) buttermilk
- 5 ml (1 tsp.) onion powder
- 5 ml (1 tsp.) garlic powder
- 15 ml (1 tbsp.) sweet paprika
- 15 ml (1 tbsp.) cumin powder
- 4 chicken breast cutlets
- 250 ml (1 cup) panko breadcrumbs
- 120 ml (8 tbsp.) mayonnaise
- 60 ml (4 tablespoons) mango, brunoise
- 5 ml (1 tsp.) curry powder
- 8 waffles
- 4 lettuce leaves
- 4 slices red onion
- 4 slices tomato
- QS canola oil
- Salt and pepper to taste
Preparation
- In a bowl, combine buttermilk, onion powder, garlic powder, paprika and cumin.
- Add and coat chicken cutlets with prepared mixture, cover and refrigerate for 12 hours.
- Remove, shake, toss each cutlet in breadcrumbs and season with salt and pepper.
- In a hot skillet, in 1 inch of oil, fry chicken cutlets, 3 minutes on each side.
- In a bowl, combine mayonnaise, mango and curry powder.
- Divide lettuce, chicken cutlets, red onion, tomato and mayonnaise among four wafers, then place a waffle on top.
