Halloumi burger with grilled peaches

HALLOUMI BURGER WITH GRILLED PEACHES

Portions : 4 - Preparation : 5 minutes - Cooking time : 6 to 8 minutes

Ingredients

  • 4 burger buns
  • 4 large slices Halloumi cheese (1' thick)
  • 90 ml (6 tablespoons) olive oil
  • 1 red onion, sliced
  • 2 peaches, cut into 8 pieces
  • 60 ml (4 tbsp) honey
  • 5 ml (1 tsp.) Tabasco sauce
  • 60 ml (4 tbsp.) mayonnaise
  • 30 ml (2 tbsp.) chives, snipped
  • 30 ml (2 tbsp.) basil leaves, chopped
  • 4 lettuce leaves
  • 8 thin slices tomato
  • Salt and pepper to taste

Preparation

  1. Preheat barbecue to maximum
  2. Brush cheese slices with a little olive oil.
  3. In a bowl, combine the red onion, peaches, remaining olive oil, salt and pepper.
  4. Grill the cheese slices and onion-peach mixture on a barbecue grill or baking mat for easy grilling, 3 to 4 minutes on each side.
  5. Lightly toast the breads.
  6. In a bowl, combine honey and hot sauce.
  7. In another bowl, mix mayonnaise, chives and basil.
  8. Spread herb mayonnaise on bottom of each burger bun, then lettuce leaves, cheese slices, honey and hot sauce mixture, tomatoes and top of each burger bun.
