PARISIAN-STYLE BURGERS

Ingredients
- 1/2 cup light mayonnaise
- 2 tbsp old-fashioned mustard
- 1 tbsp each sweet pickles and capers, finely chopped
- 1 tbsp each lemon juice and lemon zest 1
- 2 tbsp chopped fresh parsley
- salt and freshly ground pepper to taste
- 1 lb lean ground Québec pork
- 1/4 cup finely chopped onion
- 4, each kaiser rolls, split in 2 and toasted, and curly lettuce leaves
Preparation
For the mayonnaise
in a bowl, mix together mayonnaise, 15 ml (1 tbsp.) mustard, pickles, capers, lemon juice and parsley. season with pepper to taste and set aside in a cool place.
For the patties
- mix pork with onion, 15 ml (1 tbsp.) mustard and lemon zest. shape into 4 patties, 1 cm (1/2") thick and season with pepper to taste.
- grill on medium heat on the barbecue, under the broiler or in a grill pan for 6 to 8 min. halfway through cooking, turn over with a spatula. salt after cooking.
- enjoy in kaiser breads garnished with frisée lettuce and mayonnaise rémoulade.
Serving suggestion
Serve with raw vegetables such as cucumber sticks, red bell pepper strips and mushrooms. Serve with baked corn tortillas.
