Roasted carrots

Ingredients

  • 12 multicolored baby carrots, halved lengthwise
  • 60 ml (4 tbsp) olive oil
  • 15 ml (1 tbsp) sugar
  • 1 garlic clove, minced
  • 5 ml (1 tsp) Herbes de Provence
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 200°C (400°F) with rack in the center.
  2. Toss carrots with olive oil, sugar, Herbes de Provence, salt, and pepper.
  3. Arrange carrots on a baking sheet lined with a silicone mat, and bake for 12-15 minutes.
