RACK OF PORK WITH HONEY, MUSTARD AND SAGE
Portions : 6 to 8 servings - Preparation time : 15 minutes - Cooking time : 25 to 30 minutes
Ingredients
- 1 rack of pork, 6 to 8 ribs
- 250 ml (1 cup) honey
- 125 ml (½ cup) strong mustard
- 125 ml (½ cup) yellow and/or black mustard seeds
- 60 ml (4 tbsp.) tangerine zest
- ½ bunch sage, leaves removed, chopped
- 2 garlic cloves, chopped
- 6 small gray shallots, halved
- 125 ml (½ cup) veal stock
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200° C (400° F).
- In a bowl, combine honey, mustard, mustard seeds, mandarin zest and sage. Season the meat and the honey mixture with salt and pepper.
- In a hot frying pan with a little fat (olive oil, butter or Mycryo cocoa butter), sear the meat for 2 minutes on each side.
- Place the rack of pork in an ovenproof dish and pour the prepared mixture over the meat.
- Place the garlic and shallots at the bottom of the dish and add the veal stock.
- Bake in the oven for 25 to 30 minutes, depending on desired doneness. Perfect doneness requires a core temperature of 65° C (150° F).
- Serve with pan-fried vegetables and mashed potatoes. Enjoy with our Chic Choc rum lemonade.
