Sausage and white bean casserole

Ingredients

  • 6 Toulouse sausages, cut into 1” lengths
  • 1 l (4 cups) canned white beans, rinsed and drained
  • 250 ml (1 cup) vegetable broth
  • 125 ml (1/2 cup) white wine
  • 90 ml (6 tbsp) parsley, chopped
  • 250 ml (1 cup) tomato coulis
  • 250 ml (1 cup) celery, brunoise
  • 250 ml (1 cup) carrot, brunoise
  • Salt and pepper to taste

Preparation

  • Preheat oven, rack in center, to 180°C (350°F).
  • In a hot skillet, sear sausages for 2 minutes on each side.
  • In a baking dish, combine white beans, broth, wine, parsley, tomato coulis, celery, carrot, salt and pepper. Cover and bake for 30 minutes.
  • Remove lid or aluminum foil. Raise oven temperature to 200°C (400°F) and bake for 10 minutes.
