Ingredients
- 6 Toulouse sausages, cut into 1” lengths
- 1 l (4 cups) canned white beans, rinsed and drained
- 250 ml (1 cup) vegetable broth
- 125 ml (1/2 cup) white wine
- 90 ml (6 tbsp) parsley, chopped
- 250 ml (1 cup) tomato coulis
- 250 ml (1 cup) celery, brunoise
- 250 ml (1 cup) carrot, brunoise
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 180°C (350°F).
- In a hot skillet, sear sausages for 2 minutes on each side.
- In a baking dish, combine white beans, broth, wine, parsley, tomato coulis, celery, carrot, salt and pepper. Cover and bake for 30 minutes.
- Remove lid or aluminum foil. Raise oven temperature to 200°C (400°F) and bake for 10 minutes.
