Ingredients
- 1 onion, thinly sliced
- 4 sweet or hot merguez sausages
- 8 to 12 potatoes, cooked and halved
- 90 ml (6 tbsp) olive oil
- 500 ml (2 cups) tomato coulis
- 2 green peppers, cut into strips
- 500 ml (2 cups) cherry tomatoes
- 15 ml (1 tbsp) paprika
- 10 ml (2 tsp.) curry powder
- 30 ml (2 tbsp.) honey
- 3 garlic cloves, chopped
- 125 ml (1/2 cup) cheddar cheese, cubed
- 4 eggs
- 60 ml (4 tbsp.) parsley leaves, chopped
- 4 slices toast
- Salt and pepper to taste
Preparation
- In a hot skillet, sauté the onion, merguez sausage and potatoes in the oil for 3 to 4 minutes.
- Add the tomato coulis, peppers, cherry tomatoes, paprika, curry powder, honey and garlic and simmer over medium heat for 20 minutes. Check seasoning.
- On top, add the cheddar cubes, break up the eggs and cook for a further 2-3 minutes, until the eggs are cooked to your liking.
- Serve, sprinkled with parsley and accompanied by toasted bread.
