Ingredients
- 2 onions, thinly sliced
- 4 merguez sausages
- 60 ml (4 tablespoons) olive oil
- 2 garlic cloves, minced
- 8 ml (1/2 tbsp.) coriander seeds, ground
- 8 ml (1/2 tbsp.) sweet paprika
- 250 ml (1 cup) homemade tomato sauce
- 16 Grelot potatoes, cooked
- 4 red peppers, roasted and cut into strips
- 4 eggs
- 8 slices Oka cheese
- 120 ml (8 tbsp.) coriander leaves, chopped
- 4 slices bread, toasted
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- In a hot frying pan, brown the onions and merguez sausages in olive oil for 2-3 minutes.
- Add the garlic, ground coriander, paprika, tomato sauce, potatoes, peppers, salt and pepper and mix. Check the seasoning.
- On top, break eggs, season with salt and pepper, cover with cheese and bake for 10 minutes.
- Sprinkle the coriander leaves over the top and serve with toasted bread.
