Brunch casserole

Ingredients

  • 2 onions, thinly sliced
  • 4 merguez sausages
  • 60 ml (4 tablespoons) olive oil
  • 2 garlic cloves, minced
  • 8 ml (1/2 tbsp.) coriander seeds, ground
  • 8 ml (1/2 tbsp.) sweet paprika
  • 250 ml (1 cup) homemade tomato sauce
  • 16 Grelot potatoes, cooked
  • 4 red peppers, roasted and cut into strips
  • 4 eggs
  • 8 slices Oka cheese
  • 120 ml (8 tbsp.) coriander leaves, chopped
  • 4 slices bread, toasted
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a hot frying pan, brown the onions and merguez sausages in olive oil for 2-3 minutes.
  3. Add the garlic, ground coriander, paprika, tomato sauce, potatoes, peppers, salt and pepper and mix. Check the seasoning.
  4. On top, break eggs, season with salt and pepper, cover with cheese and bake for 10 minutes.
  5. Sprinkle the coriander leaves over the top and serve with toasted bread.
