Brunch casserole (bread cubes, tomato sauce, egg, bacon and cheese)

BRUNCH CASSEROLE (BREAD CUBES, TOMATO SAUCE, EGG, BACON AND CHEESE)

Portions : 4 - Preparation : 10 minutes - Cooking : 20 minutes

Ingredients

  • 2 onions, sliced
  • 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 1 garlic clove, chopped
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 8 slices bacon, cooked crisp and chopped
  • 250 ml (1 cup) tomato sauce
  • 2 slices country-style bread, cubed
  • 4 eggs
  • 250 ml (1 cup) Cheddar cheese
  • Tabasco to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a hot casserole, sauté the onion in the fat of your choice for 3 minutes.
  3. Add the garlic and peppers and sauté for a further 2 minutes.
  4. Add bacon, tomato sauce, bread cubes, 4 eggs, cheese, a few drops of Tabasco to taste and bake for 20 minutes.
