Ingredients
- 1 onion, chopped
- 250 ml (1 cup) chorizo, cubed
- 60 ml (4 tablespoons) olive oil
- 1 clove garlic, chopped
- 24 shrimp 31/40
- ¼ bunch parsley, leaves removed, chopped
- 1 green bell pepper, julienned
- 250 ml (1 cup) tomato sauce
- 60 ml (4 tbsp.) 35% cream
- 3 potatoes, boiled, cubed
- 2 slices country-style bread, cubed
- 125 ml (½ cup) mozzarella, grated
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 220°C (425°F).
- In a hot cast-iron skillet over medium heat, sauté the onion and chorizo in a little olive oil for 3 minutes.
- Add the garlic, shrimp and parsley and cook for a further 2 minutes.
- Add salt, pepper, red bell pepper, tomato sauce, cream and potatoes. Check the seasoning.
- Place the bread cubes on top, cover with grated cheese and bake for 15 minutes.
