Shrimp & chorizo casserole

Cassolette crevettes & chorizo

Ingredients

  • 1 onion, chopped
  • 250 ml (1 cup) chorizo, cubed
  • 60 ml (4 tablespoons) olive oil
  • 1 clove garlic, chopped
  • 24 shrimp 31/40
  • ¼ bunch parsley, leaves removed, chopped
  • 1 green bell pepper, julienned
  • 250 ml (1 cup) tomato sauce
  • 60 ml (4 tbsp.) 35% cream
  • 3 potatoes, boiled, cubed
  • 2 slices country-style bread, cubed
  • 125 ml (½ cup) mozzarella, grated
  • salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 220°C (425°F).
  2. In a hot cast-iron skillet over medium heat, sauté the onion and chorizo in a little olive oil for 3 minutes.
  3. Add the garlic, shrimp and parsley and cook for a further 2 minutes.
  4. Add salt, pepper, red bell pepper, tomato sauce, cream and potatoes. Check the seasoning.
  5. Place the bread cubes on top, cover with grated cheese and bake for 15 minutes.
