Hallumi cheese casserole

Cooking time: 10 to 12 minutes

Ingredients

  • 4 slices hallumi cheese
  • 60 ml (4 tablespoons) olive oil
  • 1 l (4 cups) cherry tomatoes
  • 1 clove garlic, minced
  • 15 ml (1 tbsp.) thyme, leaves removed
  • 15 ml (1 tbsp.) maple syrup
  • 60 ml (4 tbsp.) dark beer
  • 4 eggs
  • 60 ml (4 tbsp.) parsley leaves
  • 4 slices toast
  • Salt and pepper to taste

Preparation

  1. In a hot skillet, sear Hallumi slices in oil for 2 to 3 minutes on each side. Remove and set aside.
  2. In hot skillet, brown tomatoes, thyme, garlic, syrup, beer and reduce. Check seasoning and set aside.
  3. Fry the eggs.
  4. Divide the hallumi, tomato paste, eggs and parsley on each plate.
  5. Serve with slices of toast.
