Ingredients
- 4 to 6 mild or spicy Italian sausages
- 120 ml (8 tbsp) olive oil
- 1 leek, thinly sliced
- 1 clove garlic, minced
- 2 heads broccoli, cut into bite-sized pieces
- 60 ml (4 tbsp) flour
- 250 ml (1 cup) low-sodium vegetable broth
- 125 ml (1/2 cup) tomato coulis or crushed tomatoes
- 250 ml (1 cup) grated cheddar cheese
- Salt and pepper to taste
Preparation
- Preheat the oven, rack in the middle, to 200 °C (400 °F).
- In a hot skillet over medium heat, brown the sausages in a little oil, 3 to 4 minutes on each side. Remove and set aside on a plate.
- In the same hot pan, over high heat, add a little oil and sauté the leek, garlic and broccoli for 3 to 4 minutes, until browned. Season with salt and pepper.
- Add the flour and mix everything together. Then add the broth and tomato coulis.
- In an ovenproof dish, pour the vegetables, add the sausages, cover with grated cheese and leave in the oven for 15 to 20 minutes.
