Creamy Sausage and Broccoli Casserole

Ingredients

  • 4 to 6 mild or spicy Italian sausages
  • 120 ml (8 tbsp) olive oil
  • 1 leek, thinly sliced
  • 1 clove garlic, minced
  • 2 heads broccoli, cut into bite-sized pieces
  • 60 ml (4 tbsp) flour
  • 250 ml (1 cup) low-sodium vegetable broth
  • 125 ml (1/2 cup) tomato coulis or crushed tomatoes
  • 250 ml (1 cup) grated cheddar cheese
  • Salt and pepper to taste

Preparation

  1. Preheat the oven, rack in the middle, to 200 °C (400 °F).
  2. In a hot skillet over medium heat, brown the sausages in a little oil, 3 to 4 minutes on each side. Remove and set aside on a plate.
  3. In the same hot pan, over high heat, add a little oil and sauté the leek, garlic and broccoli for 3 to 4 minutes, until browned. Season with salt and pepper.
  4. Add the flour and mix everything together. Then add the broth and tomato coulis.
  5. In an ovenproof dish, pour the vegetables, add the sausages, cover with grated cheese and leave in the oven for 15 to 20 minutes.
