Ingredients
- 6 limes, juice removed
- 90 ml (6 tablespoons) olive oil
- 1 orange, juice
- 2 garlic cloves, puréed
- Tabasco to taste
- 2 tomatoes, diced
- 1 jalapeno pepper, membranes and seeds removed, finely diced
- 1 cucumber, finely diced
- 1 red onion, thinly sliced
- 500 ml (2 cups) scallops, cubed
- 60 ml (4 tablespoons) green onion, sliced
- 155 ml (1/2 cup) coriander leaves
- Salt and pepper to taste
Preparation
- In a bowl, combine lime juice, olive oil, orange juice, garlic, Tabasco, salt and pepper. Check seasoning.
- Add tomatoes, chili, cucumber, red onion and mix.
- Add the scallops, green onion and coriander and marinate for 10 minutes before serving.
Ps: For shrimp or fish options, marinating time will be 30 minutes.
