Ceviche

Ingredients

  • 6 limes, juice removed
  • 90 ml (6 tablespoons) olive oil
  • 1 orange, juice
  • 2 garlic cloves, puréed
  • Tabasco to taste
  • 2 tomatoes, diced
  • 1 jalapeno pepper, membranes and seeds removed, finely diced
  • 1 cucumber, finely diced
  • 1 red onion, thinly sliced
  • 500 ml (2 cups) scallops, cubed
  • 60 ml (4 tablespoons) green onion, sliced
  • 155 ml (1/2 cup) coriander leaves
  • Salt and pepper to taste

Preparation

  • In a bowl, combine lime juice, olive oil, orange juice, garlic, Tabasco, salt and pepper. Check seasoning.
  • Add tomatoes, chili, cucumber, red onion and mix.
  • Add the scallops, green onion and coriander and marinate for 10 minutes before serving.

Ps: For shrimp or fish options, marinating time will be 30 minutes.
