Ingredients
- 3 Québec chicken breasts
- 2 onions, chopped
- 90 ml (6 tablespoons) olive oil
- 45 ml (3 tbsp.) tomato paste
- 500 ml (2 cups) squash, cubed
- 4 garlic cloves, chopped
- 750 ml (3 cups) chicken broth
- 1 l (4 cups) cooked kidney beans
- 500 ml (2 cups) tomatoes, crushed
- 4 portions cooked rice
- Salt and pepper to taste
Preparation
- In a saucepan, sauté onion and chicken in olive oil for 3 to 4 minutes.
- Add tomato paste, squash cubes, garlic and broth and cook over medium heat for 20 minutes.
- Remove and flake meat with two forks.
- Return the meat to the pan, add the beans and tomatoes and cook, covered, for 25 minutes.
- Serve with white rice.
