Squash Chili with Chicken

Cooking Time: 50 minutes

Ingredients

  • 3 Québec chicken breasts
  • 2 onions, chopped
  • 90 ml (6 tablespoons) olive oil
  • 45 ml (3 tbsp.) tomato paste
  • 500 ml (2 cups) squash, cubed
  • 4 garlic cloves, chopped
  • 750 ml (3 cups) chicken broth
  • 1 l (4 cups) cooked kidney beans
  • 500 ml (2 cups) tomatoes, crushed
  • 4 portions cooked rice
  • Salt and pepper to taste

Preparation

  1. In a saucepan, sauté onion and chicken in olive oil for 3 to 4 minutes.
  2. Add tomato paste, squash cubes, garlic and broth and cook over medium heat for 20 minutes.
  3. Remove and flake meat with two forks.
  4. Return the meat to the pan, add the beans and tomatoes and cook, covered, for 25 minutes.
  5. Serve with white rice.
