Chiquet of cod in salad

Ingredients

  • 450 g (16 oz) fresh cod
  • 1 lime, juice
  • 1 clove garlic, minced
  • 60 ml (4 tbsp.) white vinegar
  • 1 hot pepper, membranes and seeds removed, finely chopped
  • 60 ml (4 tbsp.) canola oil
  • 1 red onion, thinly sliced
  • 2 green onion stalks, thinly sliced
  • 45 ml (3 tbsp.) parsley leaves, chopped
  • 4 multicolored cocktail tomatoes, cut into 8 pieces
  • 1 cucumber, sliced
  • salt and freshly ground pepper to taste

Preparation

  1. Bring salted water to the boil in a saucepan.
  2. Add cod and continue boiling for 5 minutes.
  3. Remove and allow cod to cool.
  4. In a bowl, crumble the cod, add the lime juice, vinegar, garlic, chili pepper, oil, red onion, green onion and parsley and mix.
  5. Add tomatoes and cucumber. Check seasoning.
  6. Serve with toasted bread.
