Ingredients
- 450 g (16 oz) fresh cod
- 1 lime, juice
- 1 clove garlic, minced
- 60 ml (4 tbsp.) white vinegar
- 1 hot pepper, membranes and seeds removed, finely chopped
- 60 ml (4 tbsp.) canola oil
- 1 red onion, thinly sliced
- 2 green onion stalks, thinly sliced
- 45 ml (3 tbsp.) parsley leaves, chopped
- 4 multicolored cocktail tomatoes, cut into 8 pieces
- 1 cucumber, sliced
- salt and freshly ground pepper to taste
Preparation
- Bring salted water to the boil in a saucepan.
- Add cod and continue boiling for 5 minutes.
- Remove and allow cod to cool.
- In a bowl, crumble the cod, add the lime juice, vinegar, garlic, chili pepper, oil, red onion, green onion and parsley and mix.
- Add tomatoes and cucumber. Check seasoning.
- Serve with toasted bread.
