Pineapple chutney

PINEAPPLE CHUTNEY

Preparation: 5 minutes - Cooking time: 15 minutes

Ingredients

  • 1 red onion, thinly sliced
  • 30 ml (2 tablespoons) fat (oil, olive oil, Mycryo cocoa butter or butter)
  • 2 garlic cloves, minced
  • 75 ml (5 tbsp.) white vinegar
  • ½ pineapple, brunoise
  • 30 ml (2 tbsp.) mustard seeds
  • 125 ml (1/2 cup) maple syrup
  • 1 sprig thyme, leaves removed
  • 15 ml (1 tbsp.) fresh ginger, grated
  • Salt and pepper to taste

Preparation

  1. In a hot skillet, sauté the onion in a little fat for 2 minutes over high heat.
  2. Add garlic and deglaze with vinegar.
  3. Add the pineapple, mustard seeds, maple syrup, thyme, ginger, salt and pepper.
  4. Cook for 10 minutes over medium heat. Check seasoning and set aside in a cool place.
