PINEAPPLE CHUTNEY
Preparation: 5 minutes - Cooking time: 15 minutes
Ingredients
- 1 red onion, thinly sliced
- 30 ml (2 tablespoons) fat (oil, olive oil, Mycryo cocoa butter or butter)
- 2 garlic cloves, minced
- 75 ml (5 tbsp.) white vinegar
- ½ pineapple, brunoise
- 30 ml (2 tbsp.) mustard seeds
- 125 ml (1/2 cup) maple syrup
- 1 sprig thyme, leaves removed
- 15 ml (1 tbsp.) fresh ginger, grated
- Salt and pepper to taste
Preparation
- In a hot skillet, sauté the onion in a little fat for 2 minutes over high heat.
- Add garlic and deglaze with vinegar.
- Add the pineapple, mustard seeds, maple syrup, thyme, ginger, salt and pepper.
- Cook for 10 minutes over medium heat. Check seasoning and set aside in a cool place.
