This delicious dessert can be made with fresh or frozen fruit, so you can enjoy it all year round. You can substitute any fruit you like, and you can enjoy it with a scoop of ice cream...

Ingredients
- 4 ripe peaches, cut into pieces
- 1/2 cup blueberries
- 1 lemon zest
- 5 ml vanilla extract
- 15 ml of rum
- 15 ml of cornstarch
- 60 ml of brown sugar
- 30 ml of maple syrup
- 250 ml of flour
- 30 ml of brown sugar
- 10 ml baking powder
- 1 pinch of salt
- 100 ml of milk
- 70 ml of cold butter
- Extra flour and milk
Preparation
- Preheat oven to 400°F or 190°C.
- In a 20 cm (about 10 inch) baking dish or cast iron skillet, arrange the peaches with the blueberries, lemon zest, vanilla, rum, cornstarch, brown sugar, and maple syrup, then mix.
- In a bowl, prepare the dough by combining the flour, brown sugar, baking powder, salt, and butter. Mix with a spatula until the mixture is fairly smooth, leaving a few small pieces of butter. Add the milk and mix until you have a sticky ball of dough.
- Sprinkle a little flour on your work surface and lay out the dough. Roll it out with your fingertips (covered with flour to prevent the dough from sticking too much) to a thickness of 1 to 1.5 cm (about ¾ inch). Then, using a cookie cutter, cut out discs of dough. Place them on top of the fruit. Brush the dough with a little milk.
- Bake for 30 minutes, until the pastry is golden.
- Remove from the oven and let cool before serving.
