Ingredients
- 1 kg (2 lb) Québec pork, cubed
- 60 ml (4 tablespoons) canola oil
- 30 ml (2 tbsp.) ground turmeric
- 30 ml (2 tbsp.) coriander seeds, ground
- 15 ml (1 tbsp.) fenugreek seeds, ground
- 3 ml (1/2 tsp.) ground cloves
- 30 ml (2 tbsp.) cumin seeds, ground
- 30 ml (2 tbsp.) mustard seeds
- 500 ml (2 cups) coconut milk
- 500 ml (2 cups) vegetable broth
- 500 ml (2 cups) taro cubes (optional, replace with potato)
- 1 eggplant, cubed
- 1 hot pepper of your choice (Jalapenos, bird's eye, Habaneros)
- 1 zucchini, cubed
- 1 red bell pepper, cubed
- Salt and pepper to taste
Preparation
- In a hot skillet, brown pork cubes in canola oil,
- Add turmeric, coriander, fenugreek, cloves, cumin, mustard seeds, coconut milk, broth, taro and eggplant. Cover and cook over low heat for 45 minutes.
- Add chili pepper to taste, zucchini and bell bell pepper and continue cooking, uncovered, for 30 minutes. Check seasoning.
