Provençal-style pork chop

PORK CHOP À LA PROVENÇALE

Portions : 4 - Preparation : 15 minutes - Cooking time : 5 to 8 minutes

Ingredients

  • 60 ml (4 tablespoons) olive oil
  • 5 ml (1 teaspoon) dried oregano
  • 5 ml (1 tsp.) sugar
  • 15 ml (1 tbsp.) tomato paste
  • 4 Québec pork chops, boneless
  • 1 onion, thinly sliced
  • 2 garlic cloves, chopped
  • 3 tomatoes, sliced
  • 2 pinches herbes de Provence blend
  • 2 zucchini, brunoise
  • Salt and pepper to taste

Preparation

  1. In a bowl, mix 30 ml (2 tbsp.) olive oil, oregano, sugar, tomato paste, salt and pepper.
  2. Coat meat with mixture. Set aside.
  3. In a hot frying pan, brown the onion in the remaining oil for 2 minutes. Add the garlic, tomato slices, herbes de Provence, zucchini, salt and pepper and sauté for 5 minutes. Check seasoning and set aside.
  4. Meanwhile, in a hot grill pan, sear the meat on each side for 2 to 3 minutes.
