PORK CHOPS WITH TOMATO SAUCE

Ingredients
- 30 ml (2 tablespoons) olive oil
- 4 garlic cloves, sliced
- 4 tomatoes, coarsely diced
- 125 ml (1/2 cup) tomato and clam cocktail (Clamato)
- 30 ml (2 tbsp.) tarragon mustard
- 30 ml (2 tbsp.) grated orange zest
- 4 Québec Pork chops, hotel cut, 150 g (5 oz.) each
- salt and cracked black pepper to taste
Preparation
- Heat olive oil in a skillet. Sauté garlic for 1 min, then add tomatoes and tomato and clam cocktail; continue cooking for 2 to 3 min. Season to taste and stir in mustard and orange zest. Cover to keep warm.
- Lightly oil chops. Grill in a grill pan, under the broiler or on the barbecue, over medium heat, for 6 to 12 min. Turn 1 or 2 times during cooking, using tongs.
- Serve grilled chops topped with tomato-mustard sauce.
Serving suggestion
Serve with grilled peppers and asparagus.
