PORK CHOPS WITH SMOKED GRUYÈRE CHEESE

Ingredients
- 4 bone-in Québec Pork chops, 2.5 cm (1 in.) thick and 150 g (5 oz.) each
- 3 tbsp Dijon mustard 45 ml
- 4 slices Gruyère cheese
- Salt and freshly ground pepper to taste
Preparation
- Slice chops thickly to form pockets. 2. Brush the inside of each chop with mustard and slide in a slice of cheese. Close. Season the chops generously with pepper on both sides.
- Grill on medium heat under the broiler, in a grill pan or on the barbecue for 6-12 min. Halfway through cooking, turn over with tongs. Season with salt after cooking.
Serving suggestion
Serve chops with baked potatoes and bell pepper strips sautéed in a little olive oil.
