PORK CHOPS AND SALSA
Portions : 4 - Preparation : 10 minutes - Cooking time : 12 to 15 minutes
Ingredients
- 4 Quebec pork chops with bone (1" thick)
- 60 ml (4 tablespoons) olive oil
- 2 garlic cloves, chopped
- 15 ml (1 tbsp.) balsamic vinegar
- 1 red bell pepper, brunoise
- 1/2 red onion, finely chopped
- 1 mango, cubed
- 15 ml (1 tbsp.) honey
- 3 ml (1/2 tsp.) chili powder
- 60 ml (4 tbsp.) lime juice
- ½ bunch chives, snipped
- 30 ml (2 tbsp.) fresh ginger, chopped
- salt and freshly ground pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F) or BBQ to maximum.
- In a bowl, mix 30 ml (2 tbsp.) olive oil, 1 garlic clove, balsamic vinegar, salt and pepper.
- Add the meat to the mixture.
- In a hot pan or on the BBQ grill, sear the meat for 2 minutes on each side.
- Continue cooking in the oven or on the BBQ, indirectly, for 8 minutes.
- In a bowl, prepare the salsa by combining the bell pepper, onion, mango, honey, chili, lime, chives, ginger, remaining garlic and olive oil, salt and pepper. Check seasoning.
- Just before serving, cover the meat with the prepared salsa.
