PORK CHOPS AU GRATIN

Ingredients
- 125 ml (1/2 cup) cheddar cheese, grated
- 125 ml (1/2 cup) mozzarella, grated
- 2 garlic cloves, chopped
- 60 ml (4 tbsp.) 35% cream
- ¼ bunch parsley, leaves removed, chopped
- 4 Québec pork chops (1'' thick, boneless)
- 45 ml (3 tbsp.) fat of your choice (butter, oil or Mycryo cocoa butter)
- 125 ml (1/2 cup) tomato sauce
- 60 ml (4 tbsp.) breadcrumbs
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- In a bowl, combine the cheddar, mozzarella, garlic, cream and parsley.
- Season chops with salt and pepper.
- In a hot frying pan, brown the chops coated with Mycryo butter, or in the fat of your choice, for 2 minutes on each side.
- On an ovenproof tray lined with parchment paper or a silicone mat, arrange the chops, brush with tomato sauce, cover with the prepared mixture, sprinkle with breadcrumbs and bake for 10 to 15 minutes, depending on desired doneness.
