Basque-style pork chops

PORK CHOPS À LA BASQUAISE

Ingredients

  • 4 boneless Québec pork chops
  • 45 ml (3 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 2 sprigs thyme, leaves removed
  • 45 ml (3 tbsp.) capers
  • 500 ml (2 cups) homemade tomato sauce
  • salt and pepper to taste

Preparation

  1. Season pork chops with salt and pepper.
  2. In a hot skillet, brown the meat coated with Mycryo butter, or in the fat of your choice, for 2 minutes on each side. Set aside on a plate.
  3. In the same pan, brown the onion for 1-2 minutes, then add the garlic, peppers, thyme, capers, tomato sauce, salt and pepper. Simmer for 5 minutes. Check seasoning.
  4. On the work surface, cut the meat into large strips. Add the strips of meat to the sauce pan and cook over medium heat for a further 5 minutes.
  5. Serve with fresh tagliatelle.
