PORK CHOPS À LA BASQUAISE

Ingredients
- 4 boneless Québec pork chops
- 45 ml (3 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 2 sprigs thyme, leaves removed
- 45 ml (3 tbsp.) capers
- 500 ml (2 cups) homemade tomato sauce
- salt and pepper to taste
Preparation
- Season pork chops with salt and pepper.
- In a hot skillet, brown the meat coated with Mycryo butter, or in the fat of your choice, for 2 minutes on each side. Set aside on a plate.
- In the same pan, brown the onion for 1-2 minutes, then add the garlic, peppers, thyme, capers, tomato sauce, salt and pepper. Simmer for 5 minutes. Check seasoning.
- On the work surface, cut the meat into large strips. Add the strips of meat to the sauce pan and cook over medium heat for a further 5 minutes.
- Serve with fresh tagliatelle.
