Ingredients
- 4 racks Quebec pork back ribs
- 1L (4 cups) Rickard's Red beer
- 15 ml (1 tbsp.) Korean chili peppers
- 250 ml (1 cup) honey
- 250 ml (1 cup) brown sugar
- 30 ml (2 tablespoons) black peppercorns, ground
- 3 limes, quartered
- 15 ml (1 tablespoon) coriander seeds, ground
- 5 garlic cloves, minced
- 60 ml (4 tbsp.) fresh ginger, chopped
- 2 large onions, chopped
- 45 ml (3 tablespoons) sesame oil
- 60 ml (4 tbsp.) soy sauce
Preparation
- Preheat barbecue to maximum.
- Remove the inner membrane along the racks of ribs.
- On the barbecue grill, sear the racks of ribs for 2 minutes on each side.
- In a roasting pan, add the beer, chillies, honey, brown sugar, pepper, lime wedges, coriander, garlic, ginger, onions, sesame oil, soy sauce and add the ribs. Cover with aluminum foil.
- Place the roasting pan on the barbecue grill, close the lid and turn down the heat to low 120° C (250° F).
- Braise the ribs for 4 hours, then remove the roasting pan from the barbecue.
- Strain the cooking juices and reduce in a saucepan to a syrupy texture. Check seasoning.
- On the hot grill, brush the racks of ribs with the sauce and grill for 5 minutes on each side before serving.
