PORTUGUESE-STYLE SPARERIBS
Portions : 4 - Preparation : 10 minutes - Cooking time : 4 hours
Ingredients
- 4 racks Quebec pork ribs
- 1,500 ml (6 cups) vegetable broth
- 750 ml (3 cups) veal stock
- 60 ml (4 tbsp.) tomato paste
- 50 ml (1 cup) sugar
- 60 ml (4 tablespoons) sweet paprika
- 15 ml (1 tbsp.) dried oregano
- 1 pinch saffron
- 125 ml (1/2 cup) parsley, chopped
- 2 onions, chopped
- 4 garlic cloves, chopped
- 2 red peppers, brunoise
- 30 ml (2 tbsp.) Piri Piri sauce
- 60 ml (4 tbsp.) flour
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 160° C (325° F).
- Remove the inner membrane from the ribs.
- On a grill, sear the ribs.
- Place ribs in a roasting pan and add broth, veal stock, tomato paste, sugar, paprika, oregano, saffron, parsley, onions, garlic, peppers and hot sauce.
- Cover with aluminum foil and bake for 3 hours 30 minutes.
- Remove the ribs from the roasting pan and place on a baking sheet.
- In a bowl, dilute the flour with a little water.
- Over medium heat, add the flour to the roasting pan containing the juices. Cook, stirring all the time, until you obtain a syrupy sauce.
- With the heat off, return the ribs to the roasting pan to coat with the sauce. They are now ready to serve.
