Honey and tarragon mustard ribs at bbq

BBQ HONEY AND TARRAGON MUSTARD RIBS

Portions : 4 - Preparation : 15 minutes - Cooking time : 3 hours and 5 to 10 minutes

Ingredients

  • 4 racks Quebec pork ribs
  • 2 bottles Richards Red (red beer)
  • 125 ml (1/2 cup) honey
  • 45 ml (3 tbsp.) tarragon mustard
  • 125 ml (1/2 cup) brown sugar
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 4 sprigs thyme
  • 2 lemons, peeled raw, cut into pieces

Preparation

  1. Preheat oven, center rack or BBQ to 160°C (325°F).
  2. Remove inner membrane from ribs.
  3. In a roasting pan, place and mix all ingredients, then add ribs.
  4. Cover roasting pan with aluminum foil and bake or BBQ indirectly for 3 hours.
  5. Remove ribs. If necessary, reduce sauce to a syrupy consistency. Brush ribs with sauce and broil or BBQ for 5 minutes.
