Côtes levées sauce citron et bière

INGREDIENTS

  • 4 squares of Québec pork ribs, the inner membrane removed
  • 5 l (6 cups) red beer (Rickards Red)
  • 15ml (1 tablespoon) hot pepper flakes
  • 250 ml (1 cup) honey
  • 250 ml (1 cup) brown sugar
  • 30 ml (2 tablespoons) black pepper, ground
  • 3 lemons, cut in quarters
  • 15 ml (1 tablespoon) cumin, grounded
  • 5 garlic cloves, chopped
  • 2 large onions, chopped
  • 15 ml (1 tablespoon) dry oregano
  • 30 ml (2 tablespoons) salt

PREPARATION

  1. Preheat the barbecue to the maximum.
  2. On the barbecue grill, sear the pork squares for 2 minutes on each side.
  3. In a roasting pan, add all remaining ingredients, pork ribs and cover with foil.
  4. On the barbecue grill, drop the roasting pan off, close the lid and lower the temperature for cooking over low heat 120°C (250°F). Allow the ribs to braise 4 hours.
  5. Then take the roasting pan out of the barbecue.
  6. Filter the cooking juices and, in a saucepan, on a low heat, let reduce, until you obtain a syrupy texture. Rectify the seasoning.
  7. Salt and pepper the rib squares.
  8. On the hot rack, place the ribs and brush them with the prepared sauce. Grill, 5 minutes of each side.

ADVICE

It is important to remove the inner membrane from the spare ribs, otherwise the flavor of the spices will not well penetrate, during cooking.
