RIBS WITH LEMON SAUCE AND MATILDA GOOSE ISLAND BEER

Ingredients
- 4 racks Quebec pork back ribs
- 1.5 l (6 cups) Matilda Goose Island beer
- 15 ml (1 tbsp.) chili flakes
- 250 ml (1 cup) honey
- 250 ml (1 cup) brown sugar
- 30 ml (2 tbsp.) black pepper, ground
- 3 lemons, quartered
- 15 ml (1 tbsp.) cumin, ground
- 5 garlic cloves, chopped
- 2 large onions, chopped
- 15 ml (1 tbsp.) dried oregano
- 30 ml (2 tbsp.) salt
Preparation
- Preheat barbecue to maximum.
- Remove inner membrane from ribs.
- On the grill, sear the racks of pork ribs for 2 minutes on each side.
- In a roasting pan, add all the other ingredients and arrange the ribs on top.
- Cover with aluminum foil.
- Place the roasting pan in the bbq and close the lid. Reduce heat to low 120° C (250° F).
- Braise the ribs for 4 hours, then remove the roasting pan from the bbq.
- Strain the juices and reduce in a saucepan to a syrupy consistency.
- Adjust the seasoning of the sauce.
- Season the racks of ribs with salt and pepper.
- Place on a hot grill and brush with the sauce. Grill the racks for 5 minutes on each side and serve.
