Spaghetti squash with bolognese sauce

Ingredients

  • 2 spaghetti squash, halved, seeds removed
  • 2 tbsp (30 ml) butter
  • 4 tbsp (60 ml) olive oil
  • 12 basil leaves, chopped
  • 1 clove garlic, chopped
  • 4 cups (1 L) homemade Bolognese sauce
  • 1 cup (250 ml) grated Parmesan
  • 1 ball fresh mozzarella, chopped (or Burrata)
  • Salt and pepper to taste

Preparation

  1. Preheat oven to 375°F (190°C) with the rack in the middle.
  2. Place squash, flesh side up, on a baking sheet lined with a silicone mat and bake for 45 minutes.
  3. Using a fork, fluff the squash flesh to form spaghetti.
  4. In the bowl of squash spaghetti, add the butter, salt, pepper and mix. Check the seasoning.
  5. In a bowl, mix the olive oil, basil, garlic, salt, pepper.
  6. In each plate, distribute the squash spaghetti, Bolognese sauce, Parmesan, mozzarella pieces and finally the prepared flavored oil.
