SAVOURY BUCKWHEAT PANCAKES
Output: 8 medium - Preparation time: 15 minutes - Cooking time: 8 to 10 minutes
Ingredients
- 1 egg
- 375 ml (1 ½ cups) buckwheat flour
- 700 ml (2 3/4 cups) water
- 3 ml (1/2 tsp.) salt
Toppings
- Sliced ham
- Fromage d'Ici cheese
- Sautéed mushrooms
- Grilled vegetables
- Etc...
Preparation
- In a bowl, whisk together eggs, half the water and salt.
- Add flour and whisk vigorously until smooth and lump-free.
- Gradually add the remaining water. Leave to rest for 10 minutes.
- In a hot, fat-coated crepe pan or non-stick frying pan, using a ladle, pour just enough crepe batter to cover the pan with a thin layer of batter and cook each crepe, 20 to 30 seconds on each side.
- Garnish each crepe to taste.
