Savoury buckwheat pancakes

SAVOURY BUCKWHEAT PANCAKES

Output: 8 medium - Preparation time: 15 minutes - Cooking time: 8 to 10 minutes

Ingredients

  • 1 egg
  • 375 ml (1 ½ cups) buckwheat flour
  • 700 ml (2 3/4 cups) water
  • 3 ml (1/2 tsp.) salt

Toppings

  • Sliced ham
  • Fromage d'Ici cheese
  • Sautéed mushrooms
  • Grilled vegetables
  • Etc...

Preparation

  1. In a bowl, whisk together eggs, half the water and salt.
  2. Add flour and whisk vigorously until smooth and lump-free.
  3. Gradually add the remaining water. Leave to rest for 10 minutes.
  4. In a hot, fat-coated crepe pan or non-stick frying pan, using a ladle, pour just enough crepe batter to cover the pan with a thin layer of batter and cook each crepe, 20 to 30 seconds on each side.
  5. Garnish each crepe to taste.
