SPANISH-STYLE SHRIMP AT THE BBQ
Portions : 4 - Preparation : 10 minutes - Cooking time : 6 minutes
Ingredients
- 75 ml (5 tablespoons) olive oil
- 2 garlic cloves, minced
- 7 ml (1/2 tbsp.) mild smoked paprika
- 15 ml (1 tbsp.) sugar
- 1 lemon, juice
- 12 raw, shelled 16/20 shrimp
- 4 cherry tomatoes
- 8 slices mild chorizo, cooked
- 60 ml (4 tbsp.) parsley, chopped
- salt and freshly ground pepper to taste
Preparation
- Preheat the BBQ to maximum.
- In a bowl, combine olive oil, garlic, paprika, sugar, lemon juice, salt and pepper.
- Add and coat shrimp.
- Make skewers, alternating shrimp, cherry tomatoes and chorizo slices.
- Place the skewers on the BBQ grill and cook for 2 minutes on one side.
- Brush with marinade and cook for 2 minutes on the other side. Continue cooking indirectly for a further 2 minutes.
- Just before serving, sprinkle the parsley over the skewers.
