Ingredients
- 24 shrimp 16/20 peeled
- 1 onion, chopped
- 60 ml (4 tbsp) olive oil
- 120 ml (8 tbsp) sundried tomatoes, chopped
- 125 ml (½ cup) black olives, chopped
- 30 ml (2 tbsp) balsamic vinegar
- 1 clove garlic, chopped
- 125 ml (½ cup) 35% cream
- 4 portions penne pasta, cooked
- 60 ml (4 tbsp) parsley leaves, chopped
- Salt and pepper to taste
Preparation
- In a hot pan, brown the shrimp and onion in olive oil.
- Add the sundried tomatoes, olives, vinegar, garlic, cream and cook for 2 minutes. Check the seasoning.
- Add the cooked pasta, parsley and mix. Check the seasoning.
