Tuscan Shrimp

Ingredients

  • 24 shrimp 16/20 peeled
  • 1 onion, chopped
  • 60 ml (4 tbsp) olive oil
  • 120 ml (8 tbsp) sundried tomatoes, chopped
  • 125 ml (½ cup) black olives, chopped
  • 30 ml (2 tbsp) balsamic vinegar
  • 1 clove garlic, chopped
  • 125 ml (½ cup) 35% cream
  • 4 portions penne pasta, cooked
  • 60 ml (4 tbsp) parsley leaves, chopped
  • Salt and pepper to taste

Preparation

  1. In a hot pan, brown the shrimp and onion in olive oil.
  2. Add the sundried tomatoes, olives, vinegar, garlic, cream and cook for 2 minutes. Check the seasoning.
  3. Add the cooked pasta, parsley and mix. Check the seasoning.
