Ingredients
- 16 peeled shrimp
- 2 passion fruits, ripe and cut in 2
- 10 g (1/3 oz) sugar
- 45 ml (3 tbsp.) water
- 45 ml (3 tbsp.) white balsamic vinegar
- 2 sprigs thyme, leaves thinned
- 90 ml (6 tbsp) olive oil
Preparation
- Halve the passion fruit, scoop out the pulp and set aside.
- Heat the sugar and water in a saucepan until lightly colored.
- Deglaze with the balsamic vinegar and stir until smooth.
- Add the fruit pulp, thyme leaves and water, then simmer the vinaigrette over low heat until it reaches a syrupy consistency.
- Remove from the heat, stir in the oil and allow the vinaigrette to cool completely before serving.
- In a hot ridged pan, or on a hot barbecue grill, cook the shrimps for 2 minutes on each side.
- Serve the shrimp with the prepared vinaigrette.
