Grilled shrimp with passion fruit thyme vinaigrette

Ingredients

  • 16 peeled shrimp
  • 2 passion fruits, ripe and cut in 2
  • 10 g (1/3 oz) sugar
  • 45 ml (3 tbsp.) water
  • 45 ml (3 tbsp.) white balsamic vinegar
  • 2 sprigs thyme, leaves thinned
  • 90 ml (6 tbsp) olive oil

Preparation

  1. Halve the passion fruit, scoop out the pulp and set aside.
  2. Heat the sugar and water in a saucepan until lightly colored.
  3. Deglaze with the balsamic vinegar and stir until smooth.
  4. Add the fruit pulp, thyme leaves and water, then simmer the vinaigrette over low heat until it reaches a syrupy consistency.
  5. Remove from the heat, stir in the oil and allow the vinaigrette to cool completely before serving.
  6. In a hot ridged pan, or on a hot barbecue grill, cook the shrimps for 2 minutes on each side.
  7. Serve the shrimp with the prepared vinaigrette.
