Ingredients
- 12 to 16 shrimp 16/20, peeled
- 30 ml (2 tablespoons) La Jardinière spice blend
- 250 ml (1 cup) shallot, chopped
- 8 ml (1/2 tbsp.) chili flakes
- 90 ml (6 tbsp.) olive oil
- 60 ml (4 tbsp.) cognac
- 1 lemon, juice
- 15 ml (1 tbsp.) tomato paste
- 125 ml (1/2 cup) cream
- 4 portions Fusilli or Penne pasta, cooked
- 125 ml (1/2 cup) green onions, sliced
- Salt and pepper to taste
Preparation
- In a hot skillet over high heat, sauté shrimp, La Jardinière spices, shallot and chili flakes in hot oil for 2 minutes.
- Deglaze with cognac and reduce for 1 minute.
- Add lemon juice, tomato paste, cream and reduce slightly. Check seasoning.
- Add cooked pasta and green onion.
