Garden shrimp

Cooking time : 7 to 8 minutes

Ingredients

  • 12 to 16 shrimp 16/20, peeled
  • 30 ml (2 tablespoons) La Jardinière spice blend
  • 250 ml (1 cup) shallot, chopped
  • 8 ml (1/2 tbsp.) chili flakes
  • 90 ml (6 tbsp.) olive oil
  • 60 ml (4 tbsp.) cognac
  • 1 lemon, juice
  • 15 ml (1 tbsp.) tomato paste
  • 125 ml (1/2 cup) cream
  • 4 portions Fusilli or Penne pasta, cooked
  • 125 ml (1/2 cup) green onions, sliced
  • Salt and pepper to taste

Preparation

  1. In a hot skillet over high heat, sauté shrimp, La Jardinière spices, shallot and chili flakes in hot oil for 2 minutes.
  2. Deglaze with cognac and reduce for 1 minute.
  3. Add lemon juice, tomato paste, cream and reduce slightly. Check seasoning.
  4. Add cooked pasta and green onion.
