Cauliflower croquette

CAULIFLOWER CROQUETTE

Portions : 4 - Preparation : 5 minutes - Cooking : 10 minutes

Ingredients

  • 250 ml (1 cup) flour
  • 250 ml (1 cup) fine cornmeal
  • 15 ml (1 tablespoon) curry powder
  • 30 ml (2 tablespoons) turmeric, ground
  • 500 ml (2 cups) almond milk
  • 2 garlic cloves, chopped
  • 1 cauliflower, chopped
  • 90 ml (6 tbsp.) plain Greek yogurt
  • 6 Thai basil leaves, chopped
  • 3 ml (1/2 tsp.) Shriracha sauce
  • qs canola oil
  • salt and pepper to taste

Preparation

  1. Heat oil for frying in a saucepan or deep fryer.
  2. In a bowl, combine flour, cornmeal, curry powder, turmeric and gradually stir in almond milk. Add the cauliflower pieces to coat with the mixture.
  3. Dip the cauliflower pieces into the hot oil and allow to brown and crisp.
  4. Meanwhile, in a bowl, combine Greek yogurt, basil, garlic, salt and pepper. Check seasoning.
  5. Serve croquettes with prepared sauce.
