CAULIFLOWER CROQUETTE
Portions : 4 - Preparation : 5 minutes - Cooking : 10 minutes
Ingredients
- 250 ml (1 cup) flour
- 250 ml (1 cup) fine cornmeal
- 15 ml (1 tablespoon) curry powder
- 30 ml (2 tablespoons) turmeric, ground
- 500 ml (2 cups) almond milk
- 2 garlic cloves, chopped
- 1 cauliflower, chopped
- 90 ml (6 tbsp.) plain Greek yogurt
- 6 Thai basil leaves, chopped
- 3 ml (1/2 tsp.) Shriracha sauce
- qs canola oil
- salt and pepper to taste
Preparation
- Heat oil for frying in a saucepan or deep fryer.
- In a bowl, combine flour, cornmeal, curry powder, turmeric and gradually stir in almond milk. Add the cauliflower pieces to coat with the mixture.
- Dip the cauliflower pieces into the hot oil and allow to brown and crisp.
- Meanwhile, in a bowl, combine Greek yogurt, basil, garlic, salt and pepper. Check seasoning.
- Serve croquettes with prepared sauce.
