Feta and walnut croquettes

FETA AND WALNUT CROQUETTES

Portions : 4 - Preparation : 15 minutes - Cooking : 5 minutes

Ingredients

  • 1 block feta cheese (approx. 300gr), cut into large 1''x1'' cubes
  • 250 ml (1 cup) bread crumbs
  • 60 ml (4 tablespoons) sesame seeds
  • 250 ml (1 cup) flour
  • 2 eggs, beaten
  • Qs : cooking oil
  • 60 ml (4 tbsp) reduced balsamic vinegar (glaze)

Topping

  • 125 ml (1/2 cup) salted almonds
  • 125 ml (1/2 cup) walnuts or cashews
  • 125 ml (1/2 cup) cranberries or other dried fruit
  • 60 ml (4 tbsp.) chives, snipped
  • 60 ml (4 tbsp.) parsley leaves, chopped
  • 60 ml (4 tbsp.) honey
  • 120 ml (8 tbsp.) olive oil

Preparation

  1. In a bowl, combine breadcrumbs and sesame seeds.
  2. In the bowl containing the flour, roll the feta cubes, then dip them in the beaten eggs and finally in the breadcrumb and sesame seed mixture.
  3. In a hot frying pan, brown the breaded cubes in a little cooking oil, about 1 minute on each side, until golden.
  4. In a bowl, combine almonds, walnuts, dried fruit, chives, parsley, honey and olive oil. Check seasoning.
  5. Divide the walnut mixture, crispy feta cubes and reduced balsamic over the top on each plate.
