Fish croquettes

Croquettes de poisson

Ingredients

The croquettes

  • 750 ml (3 cups) cooked fish (eagle, salmon, trout, sole, etc.)
  • 1 egg
  • 5 ml (1 tsp.) sweet paprika
  • 125 ml (1/2 cup) potato, boiled and mashed
  • 250 ml (1 cup) breadcrumbs (panko or traditional)
  • 60 ml (4 tbsp.) canola or olive oil
  • Salt and pepper to taste

Banana mayonnaise

  • 1 egg, yolk removed
  • ½ banana
  • 250 ml (1 cup) oil
  • 3 ml (1/2 tsp.) curry powder
  • ½ lime, juice
  • salt and pepper to taste

Preparation

  1. In a bowl, flake fish with a fork.
  2. Add egg, paprika, mashed potato, salt and pepper.
  3. Shape into equal-sized balls, then flatten slightly to form patties.
  4. Roll patties in breadcrumbs.
  5. In a hot frying pan, sear the fish croquettes in oil for 2 minutes on each side.
  6. Then continue cooking over low heat for a further 2 minutes.
  7. In a bowl, whisk together the egg yolk, banana and curry powder.
  8. Gradually whisk in the oil until firm. Check seasoning.
  9. Serve the fish croquettes with the prepared mayonnaise and a small salad.
