Ingredients
The croquettes
- 750 ml (3 cups) cooked fish (eagle, salmon, trout, sole, etc.)
- 1 egg
- 5 ml (1 tsp.) sweet paprika
- 125 ml (1/2 cup) potato, boiled and mashed
- 250 ml (1 cup) breadcrumbs (panko or traditional)
- 60 ml (4 tbsp.) canola or olive oil
- Salt and pepper to taste
Banana mayonnaise
- 1 egg, yolk removed
- ½ banana
- 250 ml (1 cup) oil
- 3 ml (1/2 tsp.) curry powder
- ½ lime, juice
- salt and pepper to taste
Preparation
- In a bowl, flake fish with a fork.
- Add egg, paprika, mashed potato, salt and pepper.
- Shape into equal-sized balls, then flatten slightly to form patties.
- Roll patties in breadcrumbs.
- In a hot frying pan, sear the fish croquettes in oil for 2 minutes on each side.
- Then continue cooking over low heat for a further 2 minutes.
- In a bowl, whisk together the egg yolk, banana and curry powder.
- Gradually whisk in the oil until firm. Check seasoning.
- Serve the fish croquettes with the prepared mayonnaise and a small salad.
