CHICKEN CROQUETTES
Portions : 4 - Preparation : 15 minutes - Cooking time : less than 10 minutes
Ingredients
- 3 Exceldor Tex-Mex chicken breasts
- 125 ml (1/2 cup) cream cheese
- 30 ml (2 tablespoons) parsley leaves, chopped
- 2 garlic cloves, chopped
- 1/2 onion, chopped
- 1 egg, white
- 125 ml (1/2 cup) plain Corn Flakes, chopped
- 125 ml (1/2 cup) breadcrumbs for filling
- 120 ml (8 tbsp.) Auguste Maple honey
- 2 to 3 eggs, beaten
- 125 ml (1/2 cup) bread crumbs for breading
- 60 ml (4 tbsp.) mayonnaise
- Salt and pepper to taste
- Qs: Cooking oil
Preparation
- Cut Tex-Mex chicken breasts into very small cubes.
- In the bowl of a food processor, puree the 2/3 chicken cubes, cream cheese, parsley, garlic, onion and egg white.
- In a bowl, combine the resulting mixture with the remaining chicken cubes, Corn Flakes, breadcrumbs, salt and pepper.
- Spoon mixture into small balls.
- Flatten each ball slightly.
- Dip each dumpling in the beaten eggs, then in the breadcrumbs.
- In a hot frying pan, over medium heat, sear the dumplings in 1" of oil for 3 minutes on each side. Continue cooking if necessary.
- Remove and set aside on paper towels.
- On a plate, drizzle some of the maple honey over the croquettes.
- In a bowl, combine mayonnaise and remaining maple honey.
- Serve croquettes and dip.
