Strawberry-blueberry bbq crumble

Ingredients

The fruit

  • 500 ml (2 cups) strawberries, cut into 4 pieces
  • 500 ml (2 cups) blueberries
  • 1 lemon, zest
  • 15 ml (1 tablespoon) cornstarch

The crumble

  • 125 ml (1/2 cup) flour
  • 375 ml (1 ½ cups) rolled oats
  • 125 ml (1/2 cup) sugar
  • 125 ml (1/2 cup) 35% Lactantia whipping cream
  • 1 pinch salt

Whipped cream

  • 250 ml (1 cup) 35% Lactantia whipping cream
  • 15 ml (1 tbsp.) natural vanilla extract
  • 30 ml (2 tbsp) sugar

Preparation

  1. Preheat barbecue to 150-200°C (350-400°F).
  2. In a bowl, combine fruit, lemon zest and cornstarch.
  3. Pour mixture into a brownie pan or cast-iron dish.
  4. In a bowl, mix butter, flour, oats, sugar, whipping cream and pinch of salt until crumbly and lumpy.
  5. Pour the mixture over the fruit.
  6. On the barbecue grill, cook indirectly (with the heat turned down), lid closed, for 30 to 45 minutes.
  7. Pour the Lactantia cream into a bowl, add the vanilla and sugar, and whip until stiff and peaks form.
  8. Serve the fruit crumble in serving bowls, adding a large spoonful of whipped cream on top.
