Ingredients
The fruit
- 500 ml (2 cups) strawberries, cut into 4 pieces
- 500 ml (2 cups) blueberries
- 1 lemon, zest
- 15 ml (1 tablespoon) cornstarch
The crumble
- 125 ml (1/2 cup) flour
- 375 ml (1 ½ cups) rolled oats
- 125 ml (1/2 cup) sugar
- 125 ml (1/2 cup) 35% Lactantia whipping cream
- 1 pinch salt
Whipped cream
- 250 ml (1 cup) 35% Lactantia whipping cream
- 15 ml (1 tbsp.) natural vanilla extract
- 30 ml (2 tbsp) sugar
Preparation
- Preheat barbecue to 150-200°C (350-400°F).
- In a bowl, combine fruit, lemon zest and cornstarch.
- Pour mixture into a brownie pan or cast-iron dish.
- In a bowl, mix butter, flour, oats, sugar, whipping cream and pinch of salt until crumbly and lumpy.
- Pour the mixture over the fruit.
- On the barbecue grill, cook indirectly (with the heat turned down), lid closed, for 30 to 45 minutes.
- Pour the Lactantia cream into a bowl, add the vanilla and sugar, and whip until stiff and peaks form.
- Serve the fruit crumble in serving bowls, adding a large spoonful of whipped cream on top.
