Smoke meat crisps

SMOKE MEAT CRISPS

Portions : 4 - Preparation : 10 minutes - Cooking time : 25 minutes

Ingredients

  • 500 ml (2 cups) smoke meat
  • 125 ml (1/2 cup) mozzarella cheese
  • 2 large gherkins
  • 1 roll filo pastry
  • 60 ml (4 tablespoons) melted butter
  • 125 ml (1/2 cup) strong mustard
  • 45 ml (3 tbsp.) honey
  • ½ bunch chives, chopped
  • salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 190° C (375° F).
  2. Using a knife, coarsely chop the smoked meat, mozzarella and gherkins.
  3. Spread a sheet of filo pastry on the work surface and brush with butter. Lay a new sheet of pastry on top of the first.
  4. Cut the sheets into 4 equal strips.
  5. Top one end of each strip with a large spoonful of the prepared mixture. Close by folding the pastry into a triangle.
  6. Place the triangles on an ovenproof rack and bake for 20 to 25 minutes, until golden-brown.
  7. Mix the strong mustard, honey and chives in a bowl.
  8. Serve the crisps with this flavored mustard.
